Instructions

  • Prepare the Peas:
    • If using fresh peas, blanch them in boiling water for 3-4 minutes until tender, then drain and rinse with cold water.
    • If using frozen peas, thaw and drain them thoroughly to remove excess moisture.
  • Mash the Peas:
    • Add the peas to a large mixing bowl and mash them with a fork or potato masher, leaving some texture for a chunky bite.
  • Mix the Ingredients:
    • To the mashed peas, add shredded cheese, flour, eggs, herbs, and any optional seasonings. Mix until the ingredients are well combined and form a thick batter.
  • Shape the Fritters:
    • Scoop about 2 tablespoons of the mixture and shape it into small patties. Repeat until all the batter is used (yields 10-12 fritters).
  • Cook the Fritters:
    • Heat 2 tablespoons of oil in a non-stick skillet over medium heat. Place the fritters in the pan, ensuring they’re not overcrowded. Cook for 3-4 minutes per side until golden brown and crispy.
    • Transfer the fritters to a plate lined with paper towels to drain excess oil.
