  • 2 cups cooked chicken, shredded or diced (boiled, grilled, or rotisserie)
  • ½ cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 teaspoon Dijon mustard (for a slight tang)
  • ½ cup celery, finely chopped
  • ¼ cup red onion, finely diced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt & black pepper, to taste
  • 1 tablespoon fresh dill or parsley, chopped (optional)

Optional Add-Ins:

  • ¼ cup sliced almonds (for crunch)
  • ¼ cup red or green grapes, halved (for sweetness)
  • ¼ cup shredded cheddar cheese (for extra flavor)
  • 1 tablespoon lemon juice (for freshness)

Instructions

1️⃣ Prepare the Chicken – If using fresh chicken, cook and shred or dice it. Rotisserie chicken works great for added flavor.

2️⃣ Mix the Dressing – In a bowl, whisk together mayonnaise (or Greek yogurt), Dijon mustard, garlic powder, onion powder, salt, and black pepper. Add lemon juice if using.

3️⃣ Combine Ingredients – In a large mixing bowl, combine the shredded chicken, celery, red onion, and fresh herbs. Pour the dressing over and mix well.

4️⃣ Add Extras – Fold in any additional ingredients like almonds, grapes, or cheese, if desired.

5️⃣ Chill & Serve – Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes
