Ingredients
  

Vegetables
  • 1 large red bell pepper – cut into 1-inch pieces
  • 1 large orange bell pepper – cut into 1-inch pieces
  • 1 large red onion – peeled and cut into 1-inch pieces
  • 1 medium zucchini – cut into 1-inch pieces
Seasoning and Oil
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper
Protein
  • 1 package chicken sausage (12 oz) – robust Italian flavor

Method
 

Preparation
  1. Start by cutting all your veggies. Place the red and orange bell peppers, red onion, and zucchini into a large mixing bowl.
  2. Drizzle the veggies with the avocado oil and toss to ensure they’re nicely coated in the oil.
  3. In a smaller bowl, combine the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Sprinkle this spice blend over your veggies and give them another good toss to coat evenly.
  4. Slice the chicken sausage into 3/4-inch rounds and add them to the bowl with the seasoned veggies. Toss everything together until well mixed.
Cooking
  1. Preheat your air fryer to 390°F and spray the air fryer basket lightly with cooking spray.
  2. Add the veggie and sausage mixture in a single, even layer.
  3. Close the air fryer and cook for 10 minutes, flipping the contents halfway through for even cooking.
Serving
  1. Once the cooking time is up, remove the sausage and veggies from the air fryer. Serve immediately, on their own or on a bed of cooked cauliflower rice or brown rice.

Notes

Make sure to cut the vegetables into similar sizes for even cooking. Feel free to swap in any vegetables you have on hand, such as broccoli or asparagus. For extra flavor, add a squeeze of lemon juice before serving.
