  • 1 cup full-fat cottage cheese Can substitute with Greek yogurt
  • 2 large eggs (room temperature) Ensure they are at room temperature for smoother batter
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder (optional) For added flavor
  • 1/4 teaspoon dried oregano (optional) For added flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper, lightly oiling it.
  2. In a blender, combine the cottage cheese, eggs, salt, and any optional spices. Blend until smooth and creamy.
  3. Pour the batter onto the prepared baking sheet and spread it into a thin rectangle.
Baking
  1. Bake for 35-40 minutes until the top is golden and firm to the touch.
  2. Let the flatbread cool completely on the baking sheet before slicing.

Notes

For a crispier texture, spread the batter thinner on the baking sheet. Store leftovers in an airtight container in the fridge for up to three days.
