Main Ingredients
  • 3 pieces boneless, skinless chicken breasts (trimmed of fat, cut into chunks)
  • 2-3 medium zucchini (thickly sliced, then cut into quarters)
  • 2-3 medium yellow squash (thickly sliced, then cut into quarters)
  • 12 oz white button mushrooms (washed & quartered)
  • to taste Salt & pepper
Flavoring Ingredients
  • 3 tbsp minced garlic
  • 1/3 cup olive oil (+ 2 tbsp) Additional for drizzling
  • 1/4-1/3 cup soy sauce
  • 1 1/2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tsp garlic powder

Method
 

Preparation
  1. Add all of the ingredients, except the 2 tablespoons of olive oil, to a large mixing bowl. Stir together until everything is evenly combined.
  2. Transfer the chicken and vegetable mixture to the basket of your air fryer, spreading it out evenly.
  3. Drizzle the remaining 2 tablespoons of olive oil over the mixture.
Cooking
  1. Cook at 375°F for 15 minutes.
  2. Serve with steamed white rice and yum yum sauce for a complete meal.

Notes

Serve hot from the air fryer. Pair with steamed white rice and drizzle with yum yum sauce for extra flavor. Adding sliced green onions or sesame seeds can enhance the dish.
