Ingredients

  • 2 medium zucchini Washed and trimmed
  • ½ cup all-purpose flour
  • 2 large eggs Whisked
  • 1 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

Preparation
  1. Wash and trim the ends of the zucchini. Cut each zucchini into fry-like sticks.
  2. Set up three shallow bowls. In the first, add the flour. In the second, whisk the eggs. In the third, combine the Panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
Coating
  1. Dredge each zucchini stick first in the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat thoroughly with the breadcrumb mixture.
Cooking
  1. Preheat your air fryer to 400°F (200°C). Arrange the coated zucchini fries in a single layer in the air fryer basket, ensuring not to overcrowd. You may need to cook in batches.
  2. Lightly spray the tops of the zucchini fries with olive oil spray.
  3. Air fry for 8-12 minutes, flipping halfway through, until golden brown and crispy.

Notes

For extra crunch, add some cornmeal to the breadcrumb mixture. Don’t rush the coating process; make sure each zucchini stick is evenly coated. For a spicier kick, add cayenne pepper or red pepper flakes to the breadcrumb mixture.
