  • 2 cups rolled oats
  • 1 cup grated zucchini
  • 1 cup grated apple
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup maple syrup or honey Adjust sweetness to taste.
  • 2 cups milk (dairy or non-dairy) Use whole milk or creamier non-dairy milk for better texture.
  • 1/2 cup walnuts or pecans (optional) Can be substituted with other nuts.
  • 1/2 cup raisins (optional) Can be substituted with other dried fruits.
For the glaze
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together the rolled oats, baking powder, salt, cinnamon, and nutmeg.
  3. Stir in the grated zucchini and grated apple.
  4. In another bowl, combine the maple syrup (or honey) and milk, then pour this mixture into the oat mixture and stir until well combined.
  5. Fold in the walnuts or pecans and raisins, if using.
  6. Pour the mixture into the prepared baking dish, spreading it out evenly.
Baking
  1. Bake for 25-30 minutes, or until the top is set and lightly golden.
  2. For the glaze, whisk together the powdered sugar, vanilla extract, and milk until smooth. Drizzle over the warm baked oatmeal before serving.

Notes

Serve this baked oatmeal warm. You can add yogurt or extra nuts on top, and it pairs well with fresh fruit. Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave or oven.
