  • 1/4 cup fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Method
 

Cooking Instructions
  1. In a saucepan, heat the olive oil over medium heat.
  2. Add the rice and sauté for 2-3 minutes until lightly toasted.
  3. Pour in the stock and lemon juice, then add the lemon zest, salt, and pepper.
  4. Bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes, or until the rice is fluffy and all the liquid is absorbed.
  5. Remove from heat, let it sit for 5 minutes, then fluff with a fork. Garnish with fresh parsley before serving.

Notes

Rinsing the rice before cooking helps remove excess starch and prevents it from becoming too sticky. Feel free to adjust the amount of lemon juice to match your taste preference. For extra flavor, you can stir in cooked vegetables like peas or carrots after cooking.
