  • 2 ripe avocados Use ripe avocados for the best flavor and texture.
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend) Experiment with different cheeses to find your favorite combination.
  • 4 tortillas (flour or corn) You can use whole wheat tortillas as well.
  • to taste Salt

Method
 

Preparation
  1. Preheat a skillet over medium heat.
  2. Cut avocados in half, remove the pits, and scoop the flesh into a bowl. Mash with a fork and season with salt.
Cooking
  1. Place a tortilla in the skillet and spread half of it with the mashed avocado. Top with cheese.
  2. Fold the tortilla in half and cook until golden and crispy, about 2-3 minutes on each side.
  3. Repeat with the remaining tortillas.
  4. Cut into wedges and serve with salsa and sour cream.

Notes

Serve warm, cut into wedges. Pairs well with salsa and sour cream. For garnishing, consider fresh cilantro or diced tomatoes. If storing leftovers, keep them in an airtight container for up to two days.
