Preparation
- Preheat the oven to 350°F (175°C).
- Lightly coat a baking dish with cooking spray or olive oil.
- In a mixing bowl, combine the cottage cheese, honey (or maple syrup), vanilla extract, and cinnamon. Stir until creamy.
- Pour half of the cottage cheese mixture into your baking dish and sprinkle with blueberries.
- Add the remaining cottage cheese mixture over the blueberries.
- Top with oats and nuts if you're using them.
Baking
- Bake for about 25-30 minutes until golden and puffed.
- Let it cool for 5 minutes and serve warm with extra honey or maple syrup.
