  • 1 cup fresh blueberries Fresh blueberries preferred; frozen is acceptable if not thawed.
  • 2 tablespoons honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract For added flavor.
  • 1/4 teaspoon cinnamon Can substitute with nutmeg or cardamom for variety.
Optional Toppings
  • 1/4 cup chopped nuts Add for crunch, such as almonds or walnuts.
  • 1/4 cup oats Optional, can skip for a gluten-free version.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Lightly coat a baking dish with cooking spray or olive oil.
  3. In a mixing bowl, combine the cottage cheese, honey (or maple syrup), vanilla extract, and cinnamon. Stir until creamy.
  4. Pour half of the cottage cheese mixture into your baking dish and sprinkle with blueberries.
  5. Add the remaining cottage cheese mixture over the blueberries.
  6. Top with oats and nuts if you're using them.
Baking
  1. Bake for about 25-30 minutes until golden and puffed.
  2. Let it cool for 5 minutes and serve warm with extra honey or maple syrup.

Serve warm with a drizzle of honey or maple syrup. Pairs well with fresh fruit or juice. Storage: Airtight container in the fridge for up to three days. Reheat in the microwave.
