  • 1 cup salsa Fresh or jarred, based on preference.
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1 tablespoon olive oil For drizzling.
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish Optional.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, place the chicken breasts and drizzle them with olive oil.
  3. Season the chicken with garlic powder, cumin, salt, and pepper.
  4. Pour salsa over the chicken, making sure it is well coated.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
  2. Top with shredded cheese and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  3. Garnish with fresh cilantro if desired, and serve hot.

Notes

Try using different types of salsa for varied flavor, such as mango salsa for a sweet twist. You can prepare it ahead by assembling it in the baking dish and storing it in the fridge until you’re ready to bake. Adjust cooking time as needed if it’s cold from the fridge.
