  • 2 large sweet potatoes Peeled and cubed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup unsalted butter Softened
  • 1 tablespoon fresh rosemary Chopped
  • 1 tablespoon fresh thyme Chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. In a large bowl, combine the sweet potatoes with olive oil, salt, and pepper. Toss to coat.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
Cooking
  1. Bake for 25-30 minutes or until the sweet potatoes are tender and golden brown.
  2. Meanwhile, in a small bowl, mix together the softened butter, Parmesan cheese, rosemary, and thyme.
  3. Once the sweet potatoes are done, remove from the oven and dollop the herb butter over the top, allowing it to melt before serving.

Notes

Cut the sweet potatoes into uniform sizes for even cooking. Experiment with different herbs; sage or parsley can also add a nice touch. For a bit of spice, add some red pepper flakes to the herb butter mix.
