Baked Ziti Recipe No Meat: A Comforting Vegetarian Dish

This vegetarian twist on classic baked ziti swaps meat for rich marinara sauce, creamy ricotta, and melty mozzarella, creating a hearty, comforting pasta bake. Ingredients
  

  • 12 oz ziti pasta cooked al dente
  • 3 cups marinara sauce store-bought or homemade
  • 1 cup ricotta cheese or cottage cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes optional, for spice
  • Salt and pepper to taste
  • Fresh basil or parsley chopped (for garnish)

Method
 

Prepare the Pasta and Sauce:
  1. Cook the ziti according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until softened, about 3–4 minutes. Stir in minced garlic and cook until fragrant, about 1 minute.
  3. Add marinara sauce, Italian seasoning, and red pepper flakes (if using). Simmer for 5–7 minutes to allow flavors to meld. Season with salt and pepper to taste.
Preheat the Oven:
  1. Set your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Assemble the Ziti:
  1. Spread a thin layer of marinara sauce on the bottom of the baking dish to prevent sticking.
  2. Add half of the cooked ziti, followed by dollops of ricotta cheese, a sprinkle of Parmesan, and a handful of mozzarella.
  3. Pour half of the marinara sauce over the pasta.
  4. Repeat the layers with the remaining ziti, ricotta, sauce, and cheeses, finishing with a generous layer of mozzarella and Parmesan on top.
Bake the Ziti:
  1. Cover the dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10–15 minutes, or until the cheese is melted and golden brown.
Cool and Serve:
  1. Let the baked ziti cool for 5–10 minutes before serving. Garnish with fresh basil or parsley for added flavor and presentation.
