  • 2 medium zucchini (sliced into rounds (4-5 mm thickness))
  • 1/4 cup olive oil Use olive oil spray for baking sheets.
  • 2/3 cup grated parmesan cheese Can be substituted with other hard cheeses.
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/2 tsp salt
  • to taste black pepper (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Spray a rimmed baking sheet (you may need 2 baking sheets) with cooking spray, preferably olive oil spray.
  3. In a bowl, combine the olive oil, salt, pepper, paprika, and garlic powder.
  4. Add the sliced zucchini to the bowl and toss well to coat each piece.
  5. Line the zucchini slices over the baking sheet and sprinkle the grated parmesan cheese on top.
Baking
  1. Bake in the oven for 15-17 minutes, or until the tops are golden and crispy.

Notes

For extra crispiness, ensure the slices are evenly cut and not too thick. You can try adding various spices for different flavors.
