  • 4 pieces chicken breasts Boneless, skinless for easy cooking
  • 4 pieces tomatoes Chopped, fresh for best flavor
  • 2 tbsp balsamic vinegar Adjust to taste
  • 1 cup mozzarella cheese Shredded or sliced
  • 1/4 cup fresh basil Chopped, for garnish and flavor
  • to taste Salt and pepper For seasoning

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper and cook until golden brown on both sides.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add chopped tomatoes and cook for a few minutes until they soften.
  5. Stir in balsamic vinegar and return the chicken to the skillet, cooking until the chicken is cooked through.
  6. Top with mozzarella cheese and fresh basil, cover, and let it melt before serving.

Notes

Serve hot, and consider pairing it with a side salad or crusty bread. A drizzle of balsamic reduction adds flavor.
