Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Stir in the sugar, beaten egg, and vanilla extract.
- Finally, mix in the flour until just incorporated.
- Fill muffin cups with batter about 2/3 full.
- Bake for 18-20 minutes until a toothpick inserted into the center comes out clean.
- Let them cool in the pan for a few minutes before transferring to a wire rack.

Serve warm or at room temperature. Pair with butter or cream cheese. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
