Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the mashed bananas, rolled oats, ground cinnamon, and vanilla extract until well mixed.
  3. If desired, fold in the dark chocolate chips and chopped nuts.
Baking
  1. Drop spoonfuls of the mixture onto a greased or lined baking sheet.
  2. Bake for 15-20 minutes or until the cookies are lightly golden.

Notes

Store the banana oatmeal cookies in an airtight container at room temperature for up to three days. If you want them to last longer, you can freeze them. Place the cookies in a single layer on a baking sheet to freeze for a few hours. Once frozen, transfer them to a freezer bag. They can be frozen for up to three months.
