  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon Can experiment with spices or omit.
  • 1/2 cup nuts or chocolate chips Optional mix-ins for added flavor and texture.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mash the ripe bananas until smooth.
  3. Add oats, almond milk, honey, vanilla extract, baking powder, and cinnamon to the mashed bananas. Mix well until combined.
  4. If desired, fold in nuts or chocolate chips.
  5. Pour the mixture into a greased 8×8-inch baking dish and spread evenly.
  6. Bake for about 20-25 minutes or until golden and set.
  7. Allow to cool before cutting into bars.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. Warm in the microwave for a cozy treat.
