  • 8 oz pasta Any pasta shape works well, such as spiral or penne.
  • 1 cup grilled chicken, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or mozzarella) Choose your favorite cheese.
  • 1/2 cup creamy dressing (ranch or your choice)
  • 1/4 cup chopped green onions
  • to taste salt and pepper

Method
 

Preparation
  1. Cook the pasta according to package instructions; drain and let cool.
  2. In a large bowl, combine the cooled pasta, grilled chicken, black beans, cheese, and green onions.
  3. Add the creamy dressing and mix well until everything is coated.
  4. Season with salt and pepper to taste.
Serving
  1. Serve chilled or at room temperature.

Notes

This salad can be made a day in advance and can be enjoyed as a main dish or side. To store leftovers, place in an airtight container in the refrigerator for 2-3 days. Add extra dressing if the pasta absorbs too much.
