Bake the Sweet Potatoes
- Preheat your oven to 200°C (400°F).
- Scrub the sweet potatoes well under running water, then dry them with a kitchen towel.
- Prick each potato several times with a fork to let the steam escape.

- Bake on a lined baking sheet for 45-50 minutes, until the skins puff, and a fork easily pierces the thick part.
Prepare the BBQ Chicken Filling
- While the potatoes bake, mix shredded chicken, BBQ sauce, Greek yogurt (or sour cream), smoked paprika, garlic powder, and onion powder in a bowl until the chicken is coated.
- Add two-thirds of the shredded cheddar and most of the spring onions, saving some for later.
Assemble the Stuffed Potatoes
- Once the sweet potatoes are ready, let them cool for 5-10 minutes.
- Slice each potato lengthwise down the middle.
- Use a fork to fluff the inside and scoop a tiny bit out if you want more room.
- Fill each potato with the BBQ chicken mixture.
Add the Final Toppings and Melt
- Top each stuffed potato with the remaining cheddar cheese.
- Return to the oven for 5-7 minutes, until the cheese melts and bubbles.
Garnish and Serve Immediately
- Let the potatoes cool slightly before serving.
- Finish by scattering the saved spring onions and fresh herbs on top.
