  • 1/2 cup BBQ sauce Adjust based on taste
Toppings and Dressing
  • 1 cup fire-roasted corn
  • 1/2 cup pickled red onions
  • 1 cup sharp cheddar cheese, shredded Can substitute with dairy-free cheese
  • 1/2 cup plain yogurt Or use a dairy-free alternative
  • 1 packet ranch seasoning Ensure it's gluten-free if needed

Method
 

Cooking Quinoa
  1. Cook quinoa in vegetable broth according to package instructions.
Preparing Chickpeas
  1. In a skillet, combine chickpeas and BBQ sauce, cooking until heated through and well-coated.
Making Dressing
  1. In a bowl, mix yogurt and ranch seasoning to make the dressing.
Assembling Bowls
  1. Layer cooked quinoa, BBQ-glazed chickpeas, fire-roasted corn, pickled red onions, and shredded cheddar cheese in bowls.
  2. Drizzle with yogurt ranch dressing, season with salt and pepper, and serve.
