Preparation
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted coconut oil, then mix in the honey or maple syrup, egg, and vanilla extract.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the ground cinnamon and flour, stirring until just combined.
- If using, fold in chocolate chips or nuts.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Serve warm with butter or cream cheese, or enjoy it plain. Wrap tightly to store; lasts 2-3 days at room temperature, up to a week in the refrigerator, or freeze for up to 3 months.
