  • 3 pieces ripe bananas Make sure they are very ripe for the best flavor.
  • 1/3 cup melted coconut oil Can substitute with melted butter or another neutral oil.
  • 1/2 cup honey or maple syrup Adjust sweetness as desired, but it may affect moisture.
  • 1 large egg For dairy-free, use a flax egg.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon Consider adding nutmeg for richer flavor.
  • 1 1/2 cups whole wheat flour You can experiment with almond flour for a gluten-free option.
  • 1/2 cup chocolate chips or nuts Optional add-ins.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted coconut oil, then mix in the honey or maple syrup, egg, and vanilla extract.
  4. Sprinkle the baking soda and salt over the mixture and mix in.
  5. Add the ground cinnamon and flour, stirring until just combined.
  6. If using, fold in chocolate chips or nuts.
  7. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter or cream cheese, or enjoy it plain. Wrap tightly to store; lasts 2-3 days at room temperature, up to a week in the refrigerator, or freeze for up to 3 months.
