Ingredients
  

Main Ingredients
  • 2 cans black beans (rinsed, drained, slightly dried)
  • ½ medium onion (finely chopped)
  • 2 cloves garlic (minced, or ½ tsp garlic powder)
  • ½ cup rolled oats or breadcrumbs
  • 1 tsp ground cumin
  • ½ tsp smoked paprika (optional)
  • ½ tsp chili powder
  • 1 tbsp olive oil (for cooking)
  • 1 tbsp soy sauce or tamari (for gluten-free)
  • 1 egg or flax egg (1 tbsp ground flax + 2.5 tbsp water)
  • ½ cup cooked rice
  • ½ cup cooked quinoa
  • ¼ cup shredded carrots
  • ¼ cup corn kernels
  • Diced to taste bell peppers
  • 1 tsp chipotle in adobo for heat

Method
 

Preparation
  1. Drain, rinse, and slightly dry the black beans. Mash about 80% of them in a large bowl.
  2. In a pan, cook the onion and garlic in olive oil until soft. Let them cool slightly.
  3. Add your spices, soy sauce, oats, binder, and the cooled onion and garlic to the mashed beans. Mix until fully combined.
  4. Shape the mixture into 4–5 equal patties but don’t overpack them. Chill the patties in the fridge for 30 minutes.
Cooking
  1. Heat a little olive oil in the pan and cook the patties for about 4-5 minutes on each side until they are golden brown.

Notes

Feel free to get creative! Add different spices or vegetables like zucchini or mushrooms for extra nutrients. You can also substitute the egg with a flax egg for a vegan option.
