  • 1 cup cottage cheese Use smooth cottage cheese for best texture.
  • 1/3 cup frozen or fresh blueberries Fresh blueberries are recommended for the best flavor.
  • 7 g gelatin Use unflavored gelatin.
  • to taste Sweetener (monk fruit drops, honey, maple syrup, powdered sugar, etc.) Adjust according to your preference for sweetness.

Preparation
  1. Add cottage cheese, blueberries, and your chosen sweetener to a blender.
  2. In a small bowl, combine the gelatin with about 1-2 tablespoons of hot water and stir until dissolved. Then add equal parts of cold water.
  3. Add the gelatin/water mixture to the blender and blend until smooth.
  4. Pour the mixture into single-serving bowls or ramekins.
  5. Chill in the fridge for at least 1-2 hours. The texture will become a super light mousse after chilling.
Serving
  1. Serve in individual bowls or ramekins. Top with extra blueberries, a sprinkle of granola, or a dollop of whipped cream for added flavor.

Notes

Store leftovers in an airtight container in the fridge. Best consumed within 2-3 days. Experiment with different fruits for unique flavors.
