Main Ingredients
  • 1/2 cup cashew butter
  • 6 tbsp vanilla protein powder
  • 3 tbsp almond flour
  • 3 tbsp maple syrup Adjust the sweetness to taste
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract (optional) Optional for extra lemon flavor
  • 1 lemon zest Zest from one lemon
  • 1/3 cup blueberries Use smaller blueberries for better distribution
Topping
  • 2 tbsp coconut butter Melt before drizzling
  • 1 tsp lemon zest For garnish

Method
 

Preparation
  1. Line a loaf pan with baking paper. A 4’’x7’’ pan works well, but a slightly smaller one is fine too.
  2. In a bowl, mix the cashew butter, protein powder, almond flour, maple syrup, vanilla extract, lemon extract, and lemon zest until smooth.
  3. Gently fold in the blueberries.
  4. Press the mixture into the lined loaf pan and add extra blueberries on top if you’d like.
  5. Refrigerate for 1 hour to let it firm up.
  6. Slice into 6 bars.
  7. Melt the coconut butter in the microwave and drizzle it over the bars. Top with more lemon zest.
  8. Refrigerate for another 15 minutes until the glaze is set.

Notes

These bars can be enjoyed straight from the fridge as a quick snack. Great for meal prep, they can be stored in an airtight container in the refrigerator for about a week, or frozen for longer storage. Use smaller blueberries for better texture and adjust sweetness as needed.
