Preparation
- Line a loaf pan with baking paper. A 4’’x7’’ pan works well, but a slightly smaller one is fine too.
- In a bowl, mix the cashew butter, protein powder, almond flour, maple syrup, vanilla extract, lemon extract, and lemon zest until smooth.
- Gently fold in the blueberries.
- Press the mixture into the lined loaf pan and add extra blueberries on top if you’d like.
- Refrigerate for 1 hour to let it firm up.
- Slice into 6 bars.
- Melt the coconut butter in the microwave and drizzle it over the bars. Top with more lemon zest.
- Refrigerate for another 15 minutes until the glaze is set.
Notes
These bars can be enjoyed straight from the fridge as a quick snack. Great for meal prep, they can be stored in an airtight container in the refrigerator for about a week, or frozen for longer storage. Use smaller blueberries for better texture and adjust sweetness as needed.
