- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove excess grease, leaving about 1 tablespoon in the pan.
- Add the chopped onion to the skillet and cook until softened.
- Stir in the minced garlic and cook for another minute.
- Add the brown sugar, bourbon, apple cider vinegar, black pepper, cayenne pepper, and thyme.
- Simmer the mixture for about 10-15 minutes until it thickens to your desired consistency.
- Let the jam cool before transferring it to a jar. Store in the refrigerator for up to 2 weeks.

Serve spread on toast, atop burgers, with cheese and crackers, or mixed into scrambled eggs. Store in a clean jar in the refrigerator for up to 2 weeks. Use a clean spoon to avoid contamination.
