  • 1 lb bacon, chopped Chop into small pieces for even cooking.
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup brown sugar Adjust sweetness to taste.
  • 1/2 cup bourbon Can swap with other liquors.
  • 1/4 cup apple cider vinegar
  • 1 tsp black pepper
  • 1/2 tsp cayenne pepper Optional, for added spice.
  • 1/4 tsp thyme

Method
 

Cooking
  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove excess grease, leaving about 1 tablespoon in the pan.
  2. Add the chopped onion to the skillet and cook until softened.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the brown sugar, bourbon, apple cider vinegar, black pepper, cayenne pepper, and thyme.
  5. Simmer the mixture for about 10-15 minutes until it thickens to your desired consistency.
  6. Let the jam cool before transferring it to a jar. Store in the refrigerator for up to 2 weeks.

Notes

Serve spread on toast, atop burgers, with cheese and crackers, or mixed into scrambled eggs. Store in a clean jar in the refrigerator for up to 2 weeks. Use a clean spoon to avoid contamination.
