Main Ingredients
  • 1 sheet puff pastry Ensure puff pastry is cold for best results.
  • 8 oz Brie cheese Cut into small pieces.
  • 1/2 cup cranberry sauce Can mix a bit of brown sugar for extra sweetness.
  • 1/2 cup chopped walnuts Add a nice crunch to the bites.
  • 1 egg for egg wash Beaten for brushing on top.
  • Honey for drizzling Adds extra sweetness.
  • Fresh rosemary for garnish Can substitute with fresh thyme.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut into squares.
  3. Place a small piece of Brie in the center of each square.
  4. Add a spoonful of cranberry sauce and some chopped walnuts on top of the Brie.
  5. Fold the pastry over to enclose the filling and seal the edges.
  6. Brush the tops with beaten egg for a golden finish.
  7. Arrange on a baking sheet and bake for 15-20 minutes or until golden and puffed.
  8. Drizzle with honey and garnish with rosemary before serving.

Notes

These puff pastry bites are best served warm. They can be stored in an airtight container in the refrigerator for up to two days. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
