  • 5 cups fresh broccoli florets
  • 1 tsp garlic powder
  • 1 tbsp curry powder
  • 12 large eggs
  • 12 large egg whites (or 1 1/2 cups)
  • 1/4 cup 2% milk
  • 1 to taste Salt
  • 1 to taste Pepper
  • 3/4 cup grated part-skim mozzarella
  • 3/4 cup grated low-fat sharp cheddar

Method
 

Preparation
  1. Preheat your oven to 375ºF. Spray a glass 10x14-inch casserole dish with cooking spray.
  2. Cut the broccoli into small florets and steam for about two minutes, or until just tender.
  3. Toss the broccoli with garlic powder, curry powder, salt, and pepper. Set aside.
  4. In a large bowl, combine eggs, egg whites, milk, salt, and pepper. Beat with a fork or whisk until mixed well.
Assembly and Baking
  1. Layer the seasoned broccoli on the bottom of the casserole dish and sprinkle the cheese evenly over the top.
  2. Pour the egg mixture over the broccoli and cheese. Use a fork to ensure the broccoli is evenly distributed through the eggs.
  3. Bake in the oven for about 30 minutes, or until the top is slightly browned and the eggs are set.

Notes

Serve warm, ideal with fresh fruit or light salad. Let the casserole sit for about 5-10 minutes before slicing to help it hold together better.
