  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 3 ripe bananas mashed Make sure they are very ripe for best flavor.
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter Melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F and line a 12-cup muffin pan with paper liners or lightly grease it.
  2. Mash the ripe bananas in a large mixing bowl until mostly smooth.
  3. Add the brown sugar, melted butter, eggs, vanilla extract, and milk to the bananas, then whisk until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the wet ingredients and stir gently until just combined. Do not overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
Baking
  1. Bake for 18 to 22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
  2. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

These muffins are delightful on their own, but you can add a smear of butter or a drizzle of honey for extra flavor. They pair wonderfully with a cup of coffee or tea.
