Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1/2 cup cocoa powder For richer flavor, use dark cocoa powder.
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 2 cups milk Non-dairy milk can be used.
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
Mix-ins
  • 1/2 cup chocolate chips Can be replaced with peanut butter chips for a different taste.
  • 1/4 cup chopped nuts Optional.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix together oats, cocoa powder, brown sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined. Stir in chocolate chips and nuts if using.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 25-30 minutes or until set.
  7. Allow to cool slightly before serving.

Notes

You can serve Brownie Baked Oatmeal warm or at room temperature. Top with ice cream, yogurt, or chocolate syrup for an extra treat. Store leftovers in an airtight container in the fridge for up to 3 days.
