Ingredients
  

For the stuffed potatoes
  • 2 large sweet potatoes Ensure they are tender after baking.
  • 1 cup shredded cooked chicken Canned chicken can be used as a substitute.
  • 2 tbsp buffalo sauce Adjust according to taste for desired heat.
  • 2 tbsp Greek yogurt Add more for a creamier texture.
  • 1/4 cup celery (chopped) For added crunch.
  • 1/4 cup shredded cheddar Optional topping.

Method
 

Preparation and Cooking
  1. Preheat the oven to 400°F (200°C).
  2. Bake the sweet potatoes for about 40 minutes until soft.
  3. While the potatoes bake, mix the shredded chicken and buffalo sauce in a bowl.
  4. Once the sweet potatoes are done, slice them open and fluff the inside with a fork.
  5. Stuff the fluffed sweet potatoes with the buffalo chicken mixture.
  6. Top each potato with Greek yogurt, chopped celery, and shredded cheddar.

Notes

Serve warm right after cooking. Feel free to add a side salad for a complete meal. Leftovers can be stored in an airtight container for up to three days.
