Preparation and Cooking
- Preheat the oven to 400°F (200°C).
- Bake the sweet potatoes for about 40 minutes until soft.
- While the potatoes bake, mix the shredded chicken and buffalo sauce in a bowl.
- Once the sweet potatoes are done, slice them open and fluff the inside with a fork.
- Stuff the fluffed sweet potatoes with the buffalo chicken mixture.
- Top each potato with Greek yogurt, chopped celery, and shredded cheddar.
Notes
Serve warm right after cooking. Feel free to add a side salad for a complete meal. Leftovers can be stored in an airtight container for up to three days.
