Cooking Steps
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the sausage and cook until browned.
  4. Stir in the diced butternut squash and cook for about 10 minutes, until just tender.
  5. Add the diced apples and cook for another 5-7 minutes, until everything is cooked through and the apples are softened.
  6. Season with salt, pepper, and fresh herbs.

Notes

Make sure to cut the butternut squash into even pieces for consistent cooking. You can experiment with different sausage types or even use diced chicken for a lighter option. Add a pinch of cinnamon or nutmeg when cooking the apples for extra flavor. For more greens, consider adding spinach or kale toward the end of cooking.
