Salad Components
  • 2 cups romaine lettuce, chopped Fresh romaine for added crunch.
  • 4 oz cooked seasoned chicken Pre-cooked for convenience.
  • 1/2 oz parmesan cheese, grated For topping.
  • 1/2 cup homemade croutons Recipe included below.
Cottage Cheese Dressing
  • 1 cup 2% low-fat cottage cheese Base for the dressing.
  • 1 large clove garlic Adds flavor to the dressing.
  • 1 tbsp lemon juice Freshly squeezed preferred.
  • 1/2 tbsp Worcestershire sauce
  • 1/2 tbsp Dijon mustard
  • 1/4 cup milk To thin the dressing.
  • 1/4 tsp salt Adjust to taste.
  • 1/4 tsp pepper Adjust to taste.
Croutons
  • 3 slices white bread For homemade croutons.
  • light spray none avocado oil For spraying the bread.
  • to taste none Italian seasoning For flavoring.
  • to taste none garlic powder For flavoring.
  • to taste none salt and pepper For seasoning.

Method
 

Preparing the Croutons
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cube the bread and spread on the baking sheet. Lightly spray with avocado oil and season with Italian seasoning, garlic powder, salt, and pepper.
  3. Bake for 12–15 minutes until golden brown.
Preparing the Dressing
  1. In a blender, combine cottage cheese, garlic, lemon juice, Worcestershire sauce, Dijon mustard, milk, salt, and pepper. Blend until smooth.
Assembling the Salad
  1. Layer the chopped romaine lettuce in a bowl.
  2. Add the cooked chicken, drizzle with the cottage cheese dressing, sprinkle with grated Parmesan, and top with homemade croutons.

Notes

Serve immediately after assembling to keep the lettuce crisp. Use pre-cooked chicken and make croutons ahead for convenience. For added flavor, consider capers or anchovies in the dressing.
