Cajun Shrimp, Sausage & Cheesy Grits Bowl

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced
  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 1 cup sharp cheddar cheese, shredded
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 large eggs
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 green onions, chopped

Method
 

  1. Bring the chicken broth to a boil in a saucepan. Slowly whisk in the grits. Reduce the heat to low and cook for 20 to 25 minutes, stirring occasionally, until thick and creamy. Stir in the butter and cheddar cheese, then season with salt and black pepper.
  2. Heat a large skillet over medium-high heat. Add the sliced sausage and cook until browned and slightly crispy on both sides. Remove from the skillet and set aside.
  3. Season the shrimp with Cajun seasoning, smoked paprika, salt, and black pepper. Add the olive oil to the same skillet and cook the shrimp for 2 to 3 minutes per side, until pink, juicy, and lightly charred.
  4. Cook the eggs in a separate skillet over medium-low heat, stirring gently until soft and fluffy.
  5. Spoon the creamy cheesy grits into serving bowls. Top each bowl with scrambled eggs, browned sausage, and plenty of Cajun shrimp.
  6. Sprinkle the shrimp and grits bowls with chopped green onions and an extra pinch of Cajun seasoning. Serve hot for a comforting seafood breakfast or easy seafood dinner.

Notes

Whisk the grits into the boiling broth slowly to help prevent lumps.
Cook the grits over low heat and stir occasionally until thick and creamy.
Add the butter and cheddar after the grits are cooked so they melt smoothly.
Brown the sausage until slightly crisp on both sides for extra texture.
Cook the shrimp only until pink, juicy, and lightly charred to avoid overcooking.
Scramble the eggs over medium-low heat for a soft and fluffy texture.
