Cajun Shrimp & Sausage Noodles

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked turkey sausage, sliced
  • 12 oz spaghetti or noodles
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • Salt, to taste
  • 2 tbsp fresh parsley, chopped

Equipment

Method
 

  1. Cook the noodles according to package directions. Drain and set aside.
  2. Toss the shrimp with Cajun seasoning, paprika, Italian seasoning, and black pepper.
  3. Heat olive oil in a large skillet over medium high heat. Cook the smoked turkey sausage for 2 to 3 minutes per side until browned. Remove and set aside.
  4. Add the shrimp to the same skillet and cook for 2 to 3 minutes per side until pink and cooked through. Remove and set aside.
  5. Add butter, onion, and bell peppers to the skillet. Cook for 4 to 5 minutes until softened. Add garlic and red pepper flakes, then cook for another 30 seconds.
  6. Pour in the chicken broth and scrape up the browned bits from the skillet. Simmer for 2 to 3 minutes until the sauce is slightly reduced.
  7. Return the sausage and shrimp to the skillet. Add the cooked noodles and toss gently until everything is coated in the Cajun garlic butter sauce. Taste and adjust salt if needed.
  8. Sprinkle with fresh parsley and serve the Cajun shrimp and sausage noodles hot.

Notes

Cook the noodles according to package directions and drain well before adding them to the skillet. Brown the sausage and cook the shrimp separately so each develops good color. Taste the finished dish before adding extra salt, since Cajun seasoning, sausage, and chicken broth can already contain sodium.
