Method
- Cook the macaroni according to the package directions until al dente. Drain and set aside.
- Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk until smooth and slightly thickened. Stir in the cheddar cheese, mozzarella cheese, garlic powder, salt, and black pepper until creamy. Fold in the cooked macaroni.
- Season the steak with Cajun seasoning, smoked paprika, salt, and black pepper. Sear in a hot skillet for 3 to 5 minutes per side, or until cooked to your preferred doneness. Let the steak rest for 5 minutes, then slice.
- Season the shrimp with the remaining Cajun seasoning. Heat the olive oil and butter in the same skillet and cook the shrimp for 1 to 2 minutes per side, until pink and tender. Remove and set aside.
- Add the garlic, green bell pepper, and red bell pepper to the skillet. Cook for 3 to 4 minutes, until tender-crisp.
- Spoon the creamy mac and cheese into serving bowls. Top with the sliced steak, Cajun shrimp, and sautéed peppers.
- Drizzle with extra cheese sauce if desired. Garnish with chopped parsley and serve with grilled corn on the cob for the ultimate surf and turf meal.
Notes
Cook the macaroni only until al dente so it stays tender without becoming mushy in the cheese sauce.
Whisk the milk into the roux gradually to help keep the cheese sauce smooth.
Cook the steak to your preferred doneness, then let it rest for 5 minutes before slicing.
Cook the shrimp only until pink and tender to avoid overcooking.
Sauté the peppers until tender-crisp so they retain some texture.
Extra cheese sauce, grilled corn, and chopped parsley are optional for serving.
