  • 18 pieces grape tomatoes
  • 18 leaves fresh basil leaves
Dressing
  • ¼ cup olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method

Preparation
  1. Cook the cheese tortellini according to the package directions. Once cooked, drain the tortellini in a colander and rinse them with cold water to cool them down.
  2. In a medium-sized bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  3. Add the cooled tortellini, grape tomatoes, and mozzarella balls to the bowl with the dressing. Toss everything together to coat them evenly. Allow the mixture to marinate for about 15 minutes.
Assembly
  1. Take a skewer and thread one grape tomato, one fresh basil leaf, one tortellini, and one mozzarella ball onto it. Repeat this process until all the ingredients are used.
Serving
  1. Place the completed skewers on a platter and drizzle them with balsamic glaze as desired.
  2. Serve immediately, or cover with foil and refrigerate until ready to serve.

Notes

Store leftover skewers in an airtight container in the refrigerator for up to two days. Keep skewers with balsamic glaze separate to avoid sogginess. Serve chilled or at room temperature.
