Preparation
- Preheat your oven and prepare a baking dish.
- In a food processor, blend the Medjool dates, raisins, and rolled oats until combined.
- Add in walnuts or sunflower seeds, desiccated coconut, grated carrot, orange juice, orange zest, ground cinnamon, and ground ginger. Pulse until mixed.
- Press the mixture evenly into the prepared baking dish.
- If desired, drizzle with dairy-free white chocolate and sprinkle extra walnuts on top.
- Bake for 30 minutes until firm.
- Let cool, then cut into bars and enjoy.
Notes
Store bars in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months. Wrap well for preservation. For added sweetness, consider adding maple syrup or agave nectar.
