  • 1 cup Medjool dates Pitted
  • 1 cup Raisins
  • 2 cups Rolled oats Use gluten-free if necessary
  • 1 cup Walnuts or sunflower seeds Optional for gluten-free version
  • 1 cup Desiccated coconut
  • 2 cups Grated carrot Finely grated for better texture
  • 1/4 cup Orange juice
  • 1 tbsp Orange zest
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground ginger
  • 1/2 cup Dairy-free white chocolate Optional for drizzling
  • 1/4 cup Extra walnuts Optional for topping

Method
 

Preparation
  1. Preheat your oven and prepare a baking dish.
  2. In a food processor, blend the Medjool dates, raisins, and rolled oats until combined.
  3. Add in walnuts or sunflower seeds, desiccated coconut, grated carrot, orange juice, orange zest, ground cinnamon, and ground ginger. Pulse until mixed.
  4. Press the mixture evenly into the prepared baking dish.
  5. If desired, drizzle with dairy-free white chocolate and sprinkle extra walnuts on top.
  6. Bake for 30 minutes until firm.
  7. Let cool, then cut into bars and enjoy.

Notes

Store bars in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months. Wrap well for preservation. For added sweetness, consider adding maple syrup or agave nectar.
