Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large bowl, mix the grated carrots and zucchini with the sugars.
- Add the oil, eggs, and vanilla extract, stirring until everything is combined.
- In another bowl, whisk the flour, baking powder, baking soda, salt, and cinnamon together.
- Slowly add the dry ingredients to the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared baking pan and spread it evenly.
Baking
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely.
Frosting
- For the frosting, beat together the cream cheese, lemon juice, and powdered sugar until smooth.
- Spread the cream cheese frosting over the cooled bars, slice them, and enjoy!
Notes
