Carrot Zucchini Bars

Ingredients
  

For the bars
  • 1 cup grated carrots
  • 1 cup grated zucchini Squeeze out excess moisture before adding.
  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon Consider adding nutmeg or allspice for variation.
For the frosting
  • 1/2 cup cream cheese
  • 1/4 cup lemon juice
  • 1 cup powdered sugar Reduce amount for less sweetness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, mix the grated carrots and zucchini with the sugars.
  3. Add the oil, eggs, and vanilla extract, stirring until everything is combined.
  4. In another bowl, whisk the flour, baking powder, baking soda, salt, and cinnamon together.
  5. Slowly add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Pour the batter into the prepared baking pan and spread it evenly.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the bars to cool completely.
Frosting
  1. For the frosting, beat together the cream cheese, lemon juice, and powdered sugar until smooth.
  2. Spread the cream cheese frosting over the cooled bars, slice them, and enjoy!

Notes

These bars are ideal for meal prep and can be served with tea or coffee. Store in an airtight container in the refrigerator for up to five days, or freeze for up to three months.
