  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup almond flour
  • 1 egg

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into florets and steam them until tender, about 5-7 minutes.
  3. Drain the cauliflower well, then let it cool slightly before putting it in a food processor.
  4. Pulsate the cauliflower until it becomes a fine rice-like texture.
  5. In a mixing bowl, combine the processed cauliflower, minced garlic, mozzarella cheese, almond flour, egg, salt, and pepper. Mix until fully combined.
Baking
  1. Line a baking sheet with parchment paper and spread the mixture into a flat, even layer.
  2. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  3. Let it cool slightly before slicing.

Notes

Make sure to drain the cauliflower well to avoid a soggy flatbread. Experiment with different cheeses for varied flavor. Add spices or herbs to the mixture for extra flavor. You can also use a rolling pin to flatten the dough if you prefer a thinner flatbread.
