Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 6 large flour tortillas or flatbread wraps
  • cups shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 4 tbsp unsalted butter melted
  • 4 cloves garlic minced
  • 1 tsp Cajun seasoning
  • ½ tsp paprika
  • ½ tsp Italian seasoning
  • ½ tsp black pepper
  • Salt to taste
  • 1 tbsp chopped fresh parsley
  • 1 tbsp lemon juice
  • Red pepper flakes optional

Method
 

  1. Season the Shrimp: In a bowl, toss the shrimp with Cajun seasoning, paprika, Italian seasoning, black pepper, and a little salt.
  2. Make the Garlic Butter: In a small bowl, mix melted butter, minced garlic, lemon juice, parsley, and red pepper flakes if using.
  3. Fill the Rolls: Lay out the tortillas or flatbread wraps. Add mozzarella, cheddar, and seasoned shrimp down the center of each one.
  4. Roll Them Up: Roll each tortilla tightly around the shrimp and cheese, then place seam side down in a greased baking dish or foil tray.
  5. Brush with Garlic Butter: Brush the tops generously with the garlic butter mixture, making sure the rolls are well coated.
  6. Bake Until Golden: Bake at 375°F for 18 to 22 minutes, until the shrimp are cooked through, the cheese is melted, and the tops are golden and bubbly.
  7. Garnish and Serve: Sprinkle with extra parsley and serve hot with garlic butter, creamy dipping sauce, or a fresh salad on the side.
