Cheesy Green Pea Fritters: Crispy, Cheesy, and Delicious

Packed with the natural sweetness of peas, the richness of cheese, and fresh herbs, they’re perfect for appetizers, family meals, or even as a lunchbox treat. Ingredients
  

  • 2 cups green peas fresh or frozen, thawed
  • 1 cup shredded cheese cheddar, Parmesan, or mozzarella
  • 1/2 cup flour all-purpose, almond flour, or chickpea flour for gluten-free
  • 2 large eggs
  • 2 tbsp fresh herbs parsley, mint, or cilantro, finely chopped
Optional add-ins:
  • 1 garlic clove minced
  • 1/4 cup finely chopped onions
  • 1/2 tsp paprika or chili flakes
  • 1 tsp lemon zest

Method
 

Prepare the Peas:
  1. If using fresh peas, blanch them in boiling water for 3-4 minutes until tender, then drain and rinse with cold water.
  2. If using frozen peas, thaw and drain them thoroughly to remove excess moisture.
Mash the Peas:
  1. Add the peas to a large mixing bowl and mash them with a fork or potato masher, leaving some texture for a chunky bite.
Mix the Ingredients:
  1. To the mashed peas, add shredded cheese, flour, eggs, herbs, and any optional seasonings. Mix until the ingredients are well combined and form a thick batter.
Shape the Fritters:
  1. Scoop about 2 tablespoons of the mixture and shape it into small patties. Repeat until all the batter is used (yields 10-12 fritters).
Cook the Fritters:
  1. Heat 2 tablespoons of oil in a non-stick skillet over medium heat. Place the fritters in the pan, ensuring they’re not overcrowded. Cook for 3-4 minutes per side until golden brown and crispy.
  2. Transfer the fritters to a plate lined with paper towels to drain excess oil.
Serve Hot:
  1. Arrange the fritters on a platter and garnish with extra herbs or grated cheese. Serve immediately with your favorite dip.

  • Baking Option: For a healthier alternative, bake fritters at 400°F (200°C) for 15-20 minutes, flipping halfway through.
