Ingredients

  • 1 baguette sliced into ½ inch pieces
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp butter melted
  • 2 cloves garlic minced
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream
  • 2 green onions sliced
  • 1 tbsp fresh parsley chopped
  • Lemon wedges for serving

Method

  1. Prepare the Bread — Preheat oven to 400°F. Arrange the baguette slices on a lined baking sheet.
  2. Season the Shrimp — Toss the shrimp with melted butter, garlic, paprika, garlic powder, salt, and black pepper.
  3. Mix the Cheese Spread — In a bowl, mix mozzarella, Parmesan, mayonnaise, sour cream, parsley, and half of the green onions until creamy.
  4. Build the Toast Bites — Spread a spoonful of the cheese mixture onto each baguette slice. Place one shrimp on top of each piece.
  5. Bake Until Golden — Bake for 10 to 12 minutes, until the bread is crisp, the cheese is melted, and the shrimp are pink and cooked through.
  6. Finish and Serve — Sprinkle with the remaining green onions and serve warm with lemon wedges.

Notes

  • Slice the baguette evenly so every bite toasts at the same rate.
  • Use large shrimp so each piece sits neatly on top of the toast.
  • Pat shrimp dry before seasoning for better texture.
  • The cheese spread can be made a day ahead and refrigerated.
  • Watch closely near the end of baking, as times vary by oven.
