Ingredients

  • 1 cup dried cherries, chopped Chop the dried cherries small for even mixing.
  • 1 cup raw pistachios, shelled
  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/2 cup shredded coconut (unsweetened, for rolling) You can substitute with crushed nuts or sesame seeds.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Chop the dried cherries and half of the pistachios.
Mixing
  1. In a large bowl, combine all the ingredients until thoroughly mixed.
Chill
  1. Refrigerate the mixture for about 30 minutes.
Forming Energy Balls
  1. Scoop out tablespoon-sized portions of the mixture and roll them into balls.
Coating
  1. Roll each ball in shredded coconut for the perfect finishing touch.
Serving
  1. Place energy balls on a platter and enjoy, or store them in the fridge.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. To prevent sticking, separate with parchment paper.
