  • 1 1/2 cups almond flour Ensure it's finely ground for the best texture.
  • 1/3 cup coconut sugar Use for a healthier sweetener.
  • 2 tsp pumpkin pie spice
  • 2 tbsp melted coconut oil Can be replaced with a plant-based oil for vegan cookies.
  • 1/3 cup pumpkin puree Homemade or canned works well.
  • 1 tsp vanilla extract Optional for added flavor.
Cinnamon Sugar Coating
  • 2 tbsp coconut sugar
  • 1 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the almond flour, coconut sugar, pumpkin pie spice, and melted coconut oil until well combined.
  3. Stir in the pumpkin puree and vanilla extract, mixing until everything is incorporated.
  4. In another small bowl, mix the cinnamon sugar coating ingredients together.
Baking
  1. Scoop the cookie dough onto a lined baking sheet and roll each ball in the cinnamon sugar coating.
  2. Flatten each ball slightly, then bake for 12-15 minutes, or until golden.
  3. Allow the cookies to cool on a wire rack before serving.

Notes

Serve cookies with hot apple cider or tea. They pair well with vanilla ice cream. Store in an airtight container at room temperature for about a week or freeze for up to three months.
