  • 2 pieces sweet potatoes peeled and diced into cubes
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into cubes.
  3. Toss the chicken breasts, sweet potatoes, and broccoli with olive oil, salt, pepper, garlic powder, and paprika.
Cooking
  1. Spread everything on a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  2. Allow to cool slightly before portioning into meal prep containers.

Notes

Make sure to cut the sweet potatoes into uniform cubes for even cooking. Feel free to swap broccoli with your favorite veggies like bell peppers or green beans. You can marinate the chicken in olive oil and spices for a few hours before cooking for extra flavor. Use parchment paper on the baking sheet for easier cleanup.
