  • 2 pieces chicken breasts, cooked and shredded You can use rotisserie chicken for convenience.
  • 1 piece ripe avocado, diced Make sure the avocado is ripe for best flavor.
  • 1/2 cup ranch dressing
  • 4 pieces large flour tortillas Whole wheat tortillas can be used for a healthier option.
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • to taste Salt and pepper

Method
 

Preparation
  1. In a bowl, mix the shredded chicken, diced avocado, and ranch dressing until well combined. Season with salt and pepper to taste.
  2. Warm the flour tortillas in a skillet or microwave.
  3. Place a portion of the chicken-avocado mixture in the center of each tortilla.
  4. Top with shredded lettuce, diced tomatoes, and shredded cheese.
  5. Roll the tortillas tightly to form burritos.
  6. Optionally, grill the burritos in a skillet for 2-3 minutes per side until crispy.
Serving
  1. Serve the burritos warm, with a side of tortilla chips or a fresh salad. Consider serving with salsa or a dollop of sour cream on the side.
Storage
  1. Store leftovers in an airtight container in the refrigerator for up to 2 days. To reheat, microwave for a minute or two until warmed through. They can be frozen for about a month by wrapping each burrito tightly.
