Ingredients
  

Meatball mixture
  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Topping
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake in the preheated oven for 20 minutes until cooked through and golden brown.
  2. Remove from the oven and drizzle marinara sauce over the meatballs.
  3. Sprinkle mozzarella cheese on top and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Serving
  1. Serve warm, garnished with more parsley if desired.

Notes

Use fresh herbs for better flavor—basil or oregano can be great additions. If the meatball mixture feels too wet, add a bit more breadcrumbs to help it hold its shape. Make your meatballs uniform in size for even cooking. For a crispy finish, broil them for a few minutes after baking.
