Dressing
  • 2 tablespoons olive oil Can substitute yogurt for a lighter dressings.
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

  • Fresh herbs like parsley or cilantro Add for extra flavor.

Preparation
  1. In a large bowl, combine the chickpeas, cucumber, tomatoes, avocado, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Garnish with fresh herbs if desired.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

To store leftovers, place the salad in an airtight container in the refrigerator and enjoy within 2-3 days. The avocado may brown, so consider adding it fresh if storing.
