Ingredients
  

Chicken and Seasoning
  • 2 pieces boneless, skinless chicken breasts Use fresh or thawed chicken.
  • 1 tablespoon chipotle seasoning Store-bought or homemade.
  • Salt and pepper to taste
Filling
  • 1 cup cooked rice Any variety can be used.
  • 1 cup black beans Drained and rinsed.
  • 1 cup fresh vegetables Such as lettuce, tomatoes, and bell peppers.
  • 1/2 cup chipotle ranch dressing Store-bought or homemade.
  • 4 large tortillas Flour or corn tortillas can be used.

Method
 

Grilling the Chicken
  1. Season the chicken breasts with chipotle seasoning, salt, and pepper.
  2. Grill the chicken over medium heat until cooked through, about 6-7 minutes per side.
  3. Let the chicken rest, then slice.
Assembling the Burrito
  1. In a tortilla, layer cooked rice, black beans, sliced grilled chicken, fresh vegetables, and drizzle with chipotle ranch dressing.
  2. Fold in the sides of the tortilla and roll it up tightly.
Serving
  1. Slice the burrito in half diagonally and place it on a plate.
  2. Serve with extra chipotle ranch dressing on the side.

Notes

For extra flavor, marinate the chicken breasts in the chipotle seasoning for a few hours before grilling. Experiment with different veggies like avocados or corn for added texture. If you like it spicy, add jalapeƱos or a dash of hot sauce inside the burrito. Store leftovers in an airtight container in the refrigerator for 2-3 days.
